I don’t know about you, but about every cell in my body feels like it is bursting with cheese, decadent desserts, wine, and all those other wonderful things I’ve been consuming since Thanksgiving. As wonderful as they are, they start to take a toll on the waistline and energy level. Sluggish is an understatement since how I’ve been feeling since the start of the New Year. I know what I have to do. Go back to clean eating and save the indulgences for once in a while.

Clean eating – geesh! That doesn’t sound yummy. That is until Julie Freed of Freed Fit comes to the rescue! She takes some of our favorite recipes and makes them delicious – AND CLEAN! She’s done it again here with her chicken paillard recipe. Enjoy!

CHICKEN PAILLARD

Ingredients

  • 4 chicken breasts
  • ½ lemon
  • 1/3 cup dry white wine
  • 2 tsp. EVOO
  • 1 garlic clove
  • 4 cups arugula
  • 1 cup cherry tomatoes, halved
  • Fresh basil
  • Salt & pepper – to taste

Directions

  1. Coat a large pan with cooking spray, add garlic and season with salt & pepper.
  2. Place each chicken breast between 2 sheets of heavy-duty plastic wrap; pound until ¼ in.
  3. Add chicken to pan and cook 4 minutes on either side.
  4. Add white wine and tomatoes. Stir and let the liquid reduce down.
  5. Toss arugula with EVOO, lemon juice, salt & pepper.
  6. Top arugula with chicken, tomatoes, and basil.
