Julie Freed has given us a tasty reminder with her roasted chicken recipe that sometimes the simple, classic meals are the way to go. Her latest Freed Fit Recipe takes roasted poultry out of the holiday season and plops it right when we need it – when the winter chill has taken hold.

Julie’s roasted chicken recipe is the type of meal you might remember coming home to after school. The savory aroma of roasted vegetables mingling with roasted chicken might even greet you outside the front door. We love Julie’s recipes because she takes traditional comfort food and tweaks it for a healthy lifestyle. This roasted chicken recipe certainly hits that spot. Thanks, Julie!

Ingredients (SERVES 6)

• 1 whole chicken (2.5-3lbs)
• 2 tbsp. EVOO
• 1 whole garlic
• 1 lemon, sliced
• 1 bundle fresh rosemary, rinsed
• 1 large yellow onion, sliced
• 1 lb. leeks, sliced
• 2 cups carrots, sliced (or 1 bag baby carrots)
• ¼ cup bone broth
• 2 tbsp. BBQ sauce
• salt & pepper – to taste

Instructions

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Coat the bottom of a large roasting pan with 1 tbsp. EVOO.
  3. Rinse garlic and cut ends off.
  4. Take chicken out of packaging, rings, remove innards, and set breast side down.
  5. Tie back wings and legs together with twine.
  6. Stuff the cavity with ½ lemon slices, garlic, and rosemary.
  7. Brush the chicken skin with 1 tbsp. EVOO.
  8. Surround the chicken with all of the vegetables (onion, leeks, and carrots) and remaining lemon slices.
  9. Season the chicken skin and vegetables generously.
  10. Cover everything with the bone broth.
    **Be careful not to touch anything with raw chicken/juice.
  11. Roast in the center rack for approximately 1 hour and 15 minutes (25 minutes per pound).
  12. Halfway through, remove from oven, and brush BBQ sauce on chicken skin.
  13. When finished, let sit for at least 30 minutes before serving.
