I’m not always able to do the cheese of the month post on the same day I get the cheese from the wonderful cheese world at Wasik’s. Sometimes a few days go by before I have the time to take photos and write the post. But, I’m always excellent about not touching the cheese until I have the time.

This is really impressive considering how challenging it is for me not to eat any cheese within a 50-foot radius. 

It’s hard for me to keep cheese in the fridge; like, really really hard! If you’re a cheese freak too, then you know what I’m talking about! 9:30 rolls around, the kids are asleep (hopefully), and you just want to relax from the stress of the day. Cheese will make it all better! My trick is not to open the new find of beautiful creamy goodness until I am ready to do the work too.

But I wasn’t so good this month. Maybe because the cheese was just that good!


Pawlet

CHEESE – Semi-Soft

DAIRY – Unpasteurized Cow’s Milk

By the time I got ready to do the post, all I had left of this mild and easy-going semi-soft cheese, was just a sliver. Hardly enough to photograph at all. I had lost control. Please forgive me.

Pawlet (Paw-let) comes from Considered Bardwell Farm, arguably one of the oldest dairy farms in Vermont, which says a lot when you think of how many dairy farms there are in Vermont.

The cheese is made from Jersey Cows’ milk, which has a higher fat and protein content; As Brian Wasik told me, the better the milk, the better the cheese! I love the texture, the light sweet flavor, and a slight earthiness to the washed rennet rind. By the way, that salty rind adds another flavor dimension to the cheese.

It’s great with a Chardonnay yet also stands up to a Pinot Noir. Pawlet is a lovely cheese, with an ivory-yellow color. Once I tasted it, I kept going back for more, which is why I ended up with that yummy little sliver. Trust me; you would too!
