Summer meals should be light and easy. Simple – like crusty bread, maybe a little cheese, and of course, wine. Perfect for when you don’t feel like standing over a hot stove or grill.
Wasik’s Cheese Shop June “Cheese of the Month” backs this philosophy. Dollop their homemade Stracciatella on top of a salad, with freshly cut strawberries, or my favorite – thick toasted Italian bread with olive oil, salt, and pepper!

Stracciatella can be three things; an Italian egg-drop soup, a gelato with chocolate flakes, or the wonderful stuff you find at Wasik’s – hand-pulled cheese curds that end up as the creamy center of burrata cheese.
What’s makes the Stracciatella found at Wasik’s so special is they handmake it in house. Stracciatella means to stretch or tear apart. So, the magic cheese makers at Wasik’s take local fresh mozzarella curds and shred it into these lovely stretchy pieces of heavenly cheese. They then mix the curds with salted fresh local cream. The result- a decadent summer topping for so many things!
Sadly, my little buddy Vincent recently broke his clavicle, so he’s been my sort of shadow during the start of summer. I knew he wouldn’t mind heading into Wasik’s, as he’s a budding young foodie himself. As you can see, he was delighted he made the trip!
We took home the cheese and under Brad Wasik’s advice heated a few slices of freshly baked Italian bread, drizzled olive oil and salt and pepper, and then topped with the Stracciatella. Good lord! Vincent and I were both in heaven.
This is a seasonal cheese at Wasik’s. So, I would get in there as fast as you can. Enjoy this on top of your avocado toast in the morning or when the sun sets on your favorite bread. Just be forewarned, you might be tempted to eat it like ice cream out of the container. It is that good!
