Ah, miso hungry, me love salmon long time! 🙂 I’m sorry if you don’t get the reference, honestly, it’s better if you don’t. I just couldn’t help myself. I’m also sorry to any 2 Live Crew fans who might be offended. But hey, the truth is not only miso hungry but also miso excited by Julie Freed’s latest Freed Fit recipe. Yes, you guessed it, miso salmon!
Although 2 Live Crew’s lyrics might not be so clean, Julie Freed’s recipes are. If I’ve been on a naughty eating kick, I turn to Julie’s Freed Fit recipes to get good food that is not only tasty but nutritious! This gem of a dish is packed with healthy fats and beneficial ingredients like coconut aminos, fresh ginger, and shitake mushrooms. Oh, and this dish can be done in under 20 minutes! Now, miso excited!
- 2-6oz fillets of salmon
- 2 tbsp. white miso
- 1 tbsp. rice vinegar
- 2 tbsp. coconut aminos
- 1 tsp. sesame oil
- 2 tbsp. green onions, diced
- 1 tbsp. fresh ginger, minced
- 2 stalks bok choy, sliced
- 1 cup shitake mushrooms, sliced
- salt & pepper – to taste
- Preheat oven to 400 degrees Fahrenheit.
- Whisk together the liquid ingredients and seasoning.
- Coat a baking sheet with cooking spray, place salmon on top and coat with 2/3 of the sauce.
- Bake for fish for 15 minutes. Finish with 2 minutes on broil.
- In the meantime, coat a large baking dish with cooking spray.
- Add the boy choy and sauté for 5 minutes.
- Pour over the reserved sauce and mushrooms and cook for another 5 minutes.
- Serve alongside the salmon.
