Lasagna is one of my absolute favorite dishes. In fact, it was one of the main reasons I used to love Garfield the Cat as a kid. Besides his sarcastic attitude, we both shared a crazy passion for the layered pasta dish.

The one problem sharing Garfield’s go-all-out-and-eat-the-entire-tray-of-lasagna mentality? One might end up like our orange furry friend, so engorged with a heavy belly that he can do is nap and watch TV.

Don’t worry; we’ve been “freed” from overly heavy lasagna. Boston event planner and healthy lifestyle advocate, Julie Freed, has a recipe that uses hearts of palm instead of pasta and is packed with her usual delicious and nutritious ingredients!

Gluten-Free Lasagna Recipe Using Hearts of Palm Noodles

Hearts of Palm Lasagna

Ingredients

• 1 lb. lean ground turkey
• 1 jar Rao’s Marinara Sauce
• 1 container low fat cottage cheese
• heart of palm lasagna noodles
• 1 egg
• chopped dried basil
• sliced mushrooms
• 1 cup fresh baby spinach
• ½ cup lite shredded mozzarella cheese
• 2 tbsp. grated parmesan cheese
• salt & pepper – to taste

Instructions

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Coat a pan with EVOO.
  3. Sauté sliced mushrooms and 1 cup of spinach.
  4. Add 1 tbsp. balsamic vinegar and season to taste.
  5. Put in a bowl and set aside.
  6. In the same pan, sauté the ground turkey until browned.
  7. Turn the heat down to low and stir in Rao’s.
  8. In a medium bowl, beat together egg, cottage cheese, shredded parmesan, dried basil,
    salt & pepper.
  9. Open hearts of palm noodle package and pat dry.
  10. Coat the bottom of a baking dish with EVOO and layer in this order:
    1. Sauce
    2. Hearts of palm noodles
    3. Cottage cheese mixture
    4. Vegetables
    5. Mozzarella cheese
    6. Hearts of palm noodles
    **Repeat this twice and finish with sauce and cheese.
  11. Bake for 20 minutes, then broil for 2 minutes until cheese is bubbly and browned.
  12. Enjoy!!!!
