The best thing about these last few weeks of summer is the incredible bounty of fresh produce coming from local farms! My favorite thing to do on Saturday is to drive over to Tiverton and Little Compton and pick up whatever looks delicious, and that’s a lot of stuff these days!
Last Saturday the abundance of heirloom tomatoes was astounding. Heirloom tomatoes are one of my favorite things, so as you can imagine, by the time I had filled my basket I had 8 pounds of those beautifully colored plump tomatoes! I also picked up some gorgeous blue potatoes, and unlike purple string beans, these beauties retain their color no matter how you cook them!
And the figs! Sweet, perfect figs. I was thinking of using the figs for my fruit tarts, but alas, we ate most of them on the way home. 😉Maybe next week.
Once finished at the farms we stop for bread, cheese, and wine. What else could one possibly need for a perfect summer meal?
As I’m heading home, all I can think about is lunch and those tomatoes!
To make your own tomato toast, just do the following:
- Brush some olive oil on slices of whole grain bread.
- Put it on the grill until it is grilled to your liking.
- Slice up a few heirloom tomatoes.
- Put them on top of toast with a drizzle of olive oil, some black pepper and a generous sprinkling of coarse salt!
And OMG – confession- I’ve made this for the last three days!
