Spicy Buttermilk Fried Chicken Sandwiches

If the way to the heart is through the stomach, then we’re pretty sure we’re sharing a recipe for love from celebrity chef and Buttermilk and Bourbon owner, Jason Santos. Why is this dish such a winner? The low acidity in buttermilk tenderizes the chicken just enough without turning it into chewy leather. The enzymes help to break down the protein in chicken making it extra tender. Tender chicken topped with tasty hot sauce make for a fantastic meal either for Valentine’s Day or game day!

Kicked Up Buttermilk Fried Chicken Sandwiches by Chef Jason Santos

Ingredients for Buttermilk Fried Chicken Sandwiches

For the Chicken:

  • 4 chicken thighs boneless & skinless
  • 1 cup buttermilk
  • 4 cup hot sauce

For the Chicken Dredge:

  • 1 tbl salt
  • 1 tbl lemon pepper
  • 1 tbl granulated garlic
  • 1 tspn Old Bay seasoning
  • ½ tspn crushed red pepper flakes
  • ½ tspn dried oregano
  • 2 cups corn flour or masa harina 
  • 2 cups all-purpose flour
  • 2 tspn salt
  • 1 tspn freshly ground black pepper
  • 1/2 tspn cayenne pepper

The Assemblage Fixings:

  • 4 soft hamburger buns
  • kicked up sauce – 1 tbsp hot sauce, ½ tsp Old Bay Seasoning, ¼ cup of mayo
  • queso fresco
  • diced tomatoes

Instructions to Make Spicy Buttermilk Fried Chicken Sandwiches

Time needed: 1 hour.

Number of Servings: 4

  1. Soak Chicken

    Soak chicken thighs in buttermilk and hot sauce for at least one hour.

  2. Dredge Chicken

    Mix dry ingredients and then dredge the chicken

  3. Fry Chicken

    Fry at 350 degrees for approximately 4-5 minutes, and then season with salt and pepper while still hot.

  4. Make “Kicked Up” Sauce

    Mix 1 tbsp hot sauce, 1/2 teaspoon Old Bay Seasoning, and 1/4 cup of mayo

  5. Assemble Chicken

    Assemble chicken on buns, top with queso fresco and diced tomatoes, and get ready for some seriously awesome finger-lickin fun!
