Chicken Soup Recipe By Freed Fit

Ingriedients (Serves 6)

  • 1 whole garlic
  • 1 cup onion, chopped in ¼ in pieces
  • 2 cups celery, chopped in ¼ in pieces
  • 2 cups carrots, chopped in ¼ in pieces
  • ¼ cup apple cider vinegar
  • 1 cup white button mushrooms, sliced
  • 2 boxes of chicken stock
  • 3 chicken breasts
  • 2 bay leaves
  • salt & pepper and garlic powder – to taste

DIRECTIONS FOR INSTANT POT

  1. Coat bottom of the pot, layer remaining ingredients, and set to soup setting.
  2. Once finished, shred chicken, add in garlic cloves (squeeze out of shell), and set to warm.

Directions for Stove Top

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Rinse garlic and cut ends off. Place on aluminum foil, cover with cooking spray and wrap.
    Place in the oven for 20 minutes or until soft.
  3. Coat a large pot with cooking spray, add onion and sauté on high until translucent.
  4. Then add celery, carrots, and apple cider vinegar and stir periodically for 5 minutes.
  5. Add mushrooms and stir until slightly browned (add additional cooking spray if necessary).
  6. Turn heat down to medium, pour in chicken stock, and drop full chicken breasts in the pot.
  7. Once the broth comes to a boil, bring the heat down to low and pull the chicken out to shred.
  8. Turn burner off, fold in shredded chicken and garlic cloves (squeeze out of shell), and cover until ready to serve.
