Let’s face it, New England got off fairly easily in the winter of 21/22. Our spring might be off to a slow start, but apparently, Mother Nature is over that, because she’s jacking the temps into the 80s in the second half of this week and into the weekend.

Since we all need a little leg up, we’re hopeful Mother Nature will keep her thermostat set to the warmer weather. With that optimism comes a good old-fashioned cheer! Now, an old-fashioned would actually do just fine, but I had something else in mind!

How about a strawberry and thyme margarita? Let’s get our taste buds ready for what our gardens will have in just a few months.

As always with a margarita, fresh ingredients are the best! I made a thyme simple syrup, pureed organic strawberries, and used one of my favorite tequilas – Codigo 1530 Rosa Tequila.

Trust me, this is a margarita recipe you’ll want to keep handy all summer long!

Strawberry and Thyme Margarita

Ingredients

  • 2 oz. Codigo 1530 Rosa Tequila
  • 2 oz. strawberry puree
  • 1.5 oz thyme simple syrup
    • 1/2 cup of water
    • 1/2 cup of sugar
    • three sprigs of thyme
  • 1 oz. lime juice
  • Topo Chico Mineral Water
  • Margarita salt

Instructions

  1. Bring water, sugar, and thyme sprigs to a rolling boil for about one minute. Lower to medium for two minutes. Set aside to cool.
  2. Puree a quart of strawberries and put into refrigerator to chill.
  3. In a shaker over ice, combine simple syrup, strawberry puree, and lime juice.
  4. Shake to your heart’s content!
  5. Rim a glass with the margarita salt of your choice.
  6. Fill rimmed glass with ice.
  7. Strain margarita over the ice.
  8. Top with a little Topo Chico Mineral Water.
  9. Enjoy and let the good times roll!
